Vegan carrot roll with peanut butter filling 🌱

Ingredients:

– 270 g carrots
– 135 g walnuts
– 1 orange
– 135 g sultanas
– 400 g self-raising flour
– 2 tsp baking powder
– 240 g soft light brown sugar
– 1/2 tsp grated nutmeg
– 1 tsp ground cinnamon
– 1/2 tsp salt
– 400 ml soy milk
– 160 ml rapeseed oil (or other flavourless oil)
– Teaspoon of Dunaliella powder by our shop 💙

 

Directions:

Combine everything, add finely chopped walnuts and blended carrots 🥕, spread on your cooking tray and bake until golden. It should be cooked through but not crispy. Spread peanut butter on the whole surface of ur cake then roll it using a moist cooking towel. Let it rest overnight in the fridge and enjoy your morning treat 😊
