To make this amazing blue iced tea you’ll need around 10 dried butterfly pea flowers, 500ml/16.9oz of fresh water, a lime or lemon, salt and honey.
Place the butterfly pea flowers in 400ml/13.5oz hot water at approx 90°C/194°F and let them steep for 5 minutes. In the meanwhile slice a lemon or lime, squeeze all the juice out of it and add a pinch of salt and lots of honey to it. Place ice cubes in a pitcher, add the lemon/lime juice to it, pour 100ml/3.4oz of room temperature fresh water onto the lime juice and finally slowly pour in the blue butterfly pea tea – voilá! You’ll notice how the blue butterfly pea tea will slowly change its color to pink when getting in contact with the lemon/lime juice. You can of course speed up the process by stirring 😉
